  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 2 garlic cloves, minced

  • 2 large carrots, peeled and diced

  • 2 celery stalks, diced

  • 1 cup dried lentils (green or brown), rinsed and sorted

  • 6 cups vegetable broth

  • 1 teaspoon ground cumin

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • 2 tablespoons tomato paste (optional for a richer flavor)

  • Fresh parsley, chopped, for garnish

  • Gluten-free crackers, for serving

Directions

  • Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until the onion is translucent and fragrant, about 5 minutes.
  • Add the diced carrots and celery to the pot. Cook, stirring occasionally, until the vegetables start to soften, about 5 minutes.
  • Stir in the rinsed lentils, vegetable broth, cumin, thyme, bay leaf, and tomato paste (if using). Season with salt and pepper.
  • Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 35-40 minutes, or until the lentils are tender.
  • Remove the bay leaf. You can leave the soup as is for a chunky texture or use an immersion blender to blend part of the soup for a creamier consistency.
  • Adjust seasoning to taste. Serve hot, garnished with fresh parsley and accompanied by gluten-free crackers on the side.
